Is there a way to change the title block for all my sheets at one go
Can you show us what have you tried?
Revit. Select titleblock on sheet, right click, pick select all instances in project, change type.
Dynamo. Similar workflow, use the above as a guide 
Not at a PC for a while.

Basicaly you have to change family type of Titleblock family.
I am also my script where i am changing Titleblock from one firm to titleblock from another firm. I am doing on sheet at a time… but through correct lacing and list stucture you can do the same thing.
