I’m in the family editor of a generic model. How would I get the model text to wrap around the surface of the sphere? [z]

Short answer: You can’t. Model Text is plane-based.

Could you project the curves / points onto the surface and build a non text based geometry out of it?

That’s the long way, but yes. You’d have to build the geometry from scratch.
