I am just thinking if there are any alternative packages or nodes that could be used to do the same routines that the lunchbox paneling nodes do? (ex. Panel.PanelQuad, Panel.PanelDiamond, etc.)

Not that I know of. Lunchbox is still supporter in Grasshopper so maybe look into Rhino Inside Revit as an alternative.
Think you can find something in Synthezise toolkit and probably clockwork if i remember right
